Kaala Channa Salad with Pomegranate, by Madhulika

Ingredients:

  • 2 cups Kaala channa (soaked overnight) 
  • ½ cup pomegranate seeds
  • ¼ cup bean sprouts
  • ¼ cup carrots chopped
  • ¼ cup cucumber chopped
  • ¼ cup red onion chopped
  • ¼ cup plum tomato’s chopped
  • ¼ cup raw mango chopped
  • ¼ cup cilantro chopped
  • Chaat Masala
  • Salt 
  • Lemon juice 
  • Green chutney 
  • Imli chutney

Directions:

  1. Wash the soaked channa thoroughly and boil with water and a dash of salt till tender drain and cool.
  2. To the cooled channa add chopped vegetables, bean sprouts and pomegranate seeds saving a few seeds and some cilantro for garnishing.
  3. Add two tbsp. each of the chutneys.
  4. Add lemon juice, salt and Chaat Masala to taste.
  5. Mix all the ingredients well taking care not to break the sprouts or crush the pomegranate seeds.
  6. Garnish with cilantro and pomegranate. 

Can be prepared few hours before serving.

Serves approx. 10-12 people.
