Spinach Wheels, by Sonika

Ingredients:

  • 1 17oz package puff pastry thawed (Pepperidge Farm or any store brand)
  • 1 package chopped frozen spinach (thawed and drained)
  • 8-9 regular sized mushrooms (finely chopped)
  • 1 small onion (finely chopped)
  • 1 package shredded mozzarella cheese
  • 1 egg
  • Spicy sauce (Maggi hot & sweet or Sri racha chili sauce mixed with mayo)
  • Red chili flakes (to taste)

Directions:

  1. Heat 1 tbsp. oil in pan; add onions and sauté until translucent, add mushrooms and heat through. Add spinach, red chili flakes and salt & pepper. Cook well until all the water dries out. 
  2. Unfold the pastry sheet onto wax paper. Spread the spicy sauce gently with a butter knife onto the whole sheet.
  3. Sprinkle lightly with mozzarella cheese.
  4. Spread the spinach mixture on ¾ or a little more than ½ the sheet from the right side to the center.
  5. When done, roll the pastry from the right to left by gently turning the waxed paper to form a log. This can keep in the refrigerator for up to two days.
  6. When ready to eat, cut the roll into slices and lay flat on lightly oiled baking sheet. Brush gently with an egg wash made with one beaten egg and 1 tbsp. water.
  7. Bake at 400 for 15 minutes or until golden.
  8. Remove the pastry from baking sheet & serve!

Some variations include chopped ham & spinach, corn & spinach or finely chopped potatoes & peas with cilantro.
